Easy Mediterranean Vegan Quinoa With Chickpeas

- 2 cups vegetable broth
- 1 cup quinoa, uncooked
- 3/4 cup chickpeas
- 1/2 cup olives, chopped
- 1/2 cup tomatoes, diced
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley
- 1/4 cup olive oil
- 1 Tbsp lemon juice
- 2 cloves of garlic, minced
- 1 tsp salt
- 1 tsp pepper
- Start by cooking the quinoa according to the package but substitute the vegetable broth for the water.
- When it is done and fluffy, add to a large bowl. Add the rest of the ingredients and stir.
- Plate up your Mediterranean vegan quinoa and enjoy!
